Could do this in muffin tins, but I've found success in a greased loaf pan, for ~30-35 mins @325F in a convection oven. Aiming for internal temp of ~190F.

Banana Bread

  • 3 ripe bananas
  • 1/2c chickpea flour
  • 1c flour
  • 1/2c+ sugar
  • 1.5 tsp baking powder
  • roasted walnuts (1c?)
  • 1/2 tsp table salt
  • 1 egg
  • 1/4c milk
  • water if needed to make pourable batter
